All the easy answers....

Maybe it's just me, but have you ever noticed that the parenting magazines have all the easy answers? Each month is basically a rehash of the month before, ground up, and served in a new "dish" to make it look different. But the truth is, it's nothing new. The author might be - the way it's presented might be - but the basic information is the same ole' same.

I got a magazine in the mail today - can't remember if it's Parenting or Parents, but anyways, one piece of advice, was not to get into power struggles with your child. Well, hallelujah....if I hadn't of read that, I'd never have known. Seriously, does anyone set out to get into a power struggle with a child? Does anyone enjoy them? I mean, I don't purposely set out to have power struggles with Victoria, but they happen. Do I want them to happen? Absolutely not! But you know it's so much easier said then done.

These magazines seem to have all the answers to your biggest parenting nightmares but really, it isn't that simple. If it was, there wouldn't be any need for the magazines - we'd all have learned the answers in the first issue and be perfect parents now.

Fabulous New Burger Recipe!!!

I found a recipe last night in a food magazine and decided to try it tonight. I took the basic recipe and changed it up and it came out so amazing! I thought I'd share it with my readers!

Avocado Tomato CheeseBurger

Sauce:
1 tbsp lemon juice
1/4 tsp westchestershire sauce
1 medium ripe avocado
1/2 cup mayo
1/4 cup sour cream
1/8 tsp red pepper flakes

Put all ingredients in blender and process till smooth - refrigerate till needed.

1/4 cup parmesan cheese
1 tsp garlic powder
1 pound ground beef (I used black Angus ground beef - made for some awesome burgers)

Mix all ingredients together and shape into 4 patties.

In frying pan, heat 2 tbsp of olive oil - when hot put burgers in pan and fry 7-8 minutes on each side - till 165 degrees and juices running clear.

While burgers are frying, cut open 4 ciabatta rolls, brush with olive oil and put under the broiler till toasted.

Take each roll and put 1 tbsp of avacado mayonnaise on top and bottom of rolls. On bottom half, put several baby spinach leaves.

When burgers are done cooking, place a slice of fresh mozzarella (I use Sorrento brand - seen here because we don't have access to good Italian grocery stores up here) cover the burgers and let cheese just start to melt. Take burgers and place them on top of spinach on bottom roll. Sprinkle on some dried basil. Top with two slices of tomato and a dash of pepper. Top with top roll.

Then sit back and enjoy and savor each and every delicious bite.

This burger was just fabulous - the flavors were just so amazing together!!! This recipe is a definite keeper in our house!
